Manuel Escalante Posse
My name is Manuel Escalante Posse (please call me Chef Manu). I was born and raised in Buenos Aires, Argentina and I’ve been a professional chef since 2005.
Beginning in 2006 I lived in a small town in remote Southern Patagonia, El Calafate, where I was the bakery chef at a 5 star hotel for about 2 and a half years. I then traveled to New Zealand, living there as an expat for about 2 years, working with chefs from all over the world like Brazil, England, France, Thailand and of course, New Zealand. I then returned to Buenos Aires in 2010.
In 2012 my my wife, and Sommelier, Veronica and I opened our recreational cooking school, Tierra Negra Gourmet. We teach Argentine culture to the world, through food, wine and our culinary traditions.
