Baking with rye flour requires a very different process than baking with wheat. Its sticky texture may seem difficult to work with at first, but with a few tricks and tips it’s possible for bakers of any skill level to be producing rye breads and pastries of all types. In this one-day class we’ll be tackling some Northern European applications of rye, making both a pan loaf that’s perfect for everyday eating and a traditional Finnish pastry.
As an added treat, we’ll sit down to enjoy a Scandinavian Smorrebrod lunch of open-faced sandwiches and a variety of toppings and sides. Cost for the class includes lunch, and participants will leave with their homemade rye bread, pastries, and the recipes and knowledge to recreate these at home.
Students are asked to bring:
- a rolling pin, if possible.
