In A Pickle and A Jam – Savory Sweet: Easy & Simple Preserving for Today’s Kitchens, with Beth Dooley

Skill Level: No experience necessary

Preserve the glorious harvest of apples, pears, berries, root vegetables, onions, cucumbers, peppers, all from the garden, all good. We’ll review the basic preserving techniques and provide guidelines for different, sure-fire methods. Using less sugar and no added pectin, we’ll create healthy condiments that shine with natural flavors. We’ll create recipes that may include raspberry-rose hip jam, scarlet bell pepper and chile’ conserve, black current vinegar, classic chutney, cardamom carrot relish, and more. This class will focus on small-batch preserving for quicker, easier, and fresher results well suited to the way we eat and live today.

Students should bring:

All classes are for adults (18+) unless otherwise noted.

Class Minimums:
Be aware we may cancel 5 days before class date if a minimum number of registrations not reached. We work to balance teachers' need to plan for a class with students' busy schedules -- not an easy task. Please register as early as possible!
