Lebkuchens Recipe
Here’s a family recipe for Lebkuchens, a German holiday season cookie from our Board member Cathy Wegener. She says they make their cookies over Thanksgiving weekend and then cure with apple slices until Christmas:
Mix together, bring to boil and then cool:
½ cup of honey
½ cup of molasses
Stir in:
1 egg
1 tablespoon of lemon juice
1 tablespoon of grated lemon rind
Whisk together, then stir into wet ingredients:
2 ¾ cups of flour
½ teaspoon of baking soda
1 teaspoon of cinnamon
1 teaspoon of cloves
1 teaspoon of allspice
1 teaspoon of nutmeg
Mix in:
1/3 cup of citron
½ cup of chopped nuts
Chill dough overnight. Roll out small amount, keep rest chilled. Roll out to ¼ inch thick, into oblongs 1 ½ X 2 ½ inch. Place one inch apart on greased baking sheet. Bake at 400 degrees for about 10-12 minutes, until no imprint remains when lightly touch. Once remove from oven immediately brush with Glazing Icing, then remove from baking sheet and cool.
